United Airlines NYC Half Marathon 2016

What a PR Means to Me

I’ve been thinking about what a PR means to me for the last few days, since I set a personal record for the half marathon at the New York City Half Marathon last Sunday. It isn’t about being faster than other runners. It’s not even about being faster than I’ve been before, as the term suggests. It’s about achieving more than I thought was possible, not just in this race but with running in general, and beginning to believe I really have it in me to run a marathon.

Gluten free Blueberry Vanilla Muffins, made with sorghum and quinoa flour and perfect for a sweet spring breakfast.

Blueberry Vanilla Muffins

There’s nothing quite like popping a fresh plump, juicy blueberry into your mouth, closing your eyes, and feeling the flavor explode on your tongue. But in my humble opinion, blueberries are also the best berry to bake with. Blueberry buckle, blueberry pie, blueberry cobbler, and of course, blueberry muffins. There are countless recipes out there for the making, but I’d like to introduce you to these gluten free Blueberry Vanilla Muffins. Made with sorghum flour, they’re the perfect blend of a light and fluffy interior with a sturdy, sweet exterior and tasty top. Wait for the first spring blueberries to roll in, and whip up a batch to see for yourself…

WIAW #50: Half Marathon Weekend Eats

I cannot believe this is the 50th time I’ve written a WIAW post. They’ve become a staple on the blog. I found, after years of wondering why in the world someone would bother taking a picture of their food, that they’re actually some of the easiest and most enjoyable posts to write, because I like eating, cooking and baking, and it’s nice to think others might admire the result of my endeavors, or just be interested in the combinations of eats I create. And I find inspiration for my own meals by reading similar posts on other blogs. So here we go again, this time with a rundown of my eats the weekend of a half marathon in New York City.

Third Time’s the Charm at the NYC Half Marathon

Yesterday I ran the New York City Half Marathon for the third year in a row. This race was my first half marathon ever in March 2014. I was so happy and proud (and freezing in the 15 degree weather!) afterwards, and the moment I crossed the finish line, just a year after I first ran three miles without stopping, was the same moment I began to dream of running the marathon one day. My second time around last March was a little warmer and a little less momentous – still fun, of course! This year felt like the third time’s the charm. Not only did I set a personal record, it marked my first longer distance race of 2016, putting me on the path to the Marathon come November.

Grain, gluten and dairy free banana muffins made with quinoa flakes and buckwheat flour, hearty and delicious.

Buckwheat & Quinoa Banana Muffins

The first recipe I ever created was for Banana Maple Oat Muffins. They were the start of my marvelous muffin phase, when I was getting excited about baking and blogging, and for months I whipped up a batch on a weekly basis. So it’s a little sad that I can no longer indulge in the gluten free rolled oats that formed their muffin-y hearts. However, as with my oatmeal cakes, I’ve come up with a spin on those muffins that uses quinoa flakes instead of oats and produces just as a delicious a result. These Buckwheat & Quinoa Banana Muffins aren’t just gluten free. They’re totally grain free, dairy free, and perfect to munch on any time of day.

Thinking Out Loud: Plans and Priorities

I’ve been thinking a lot lately about plans and priorities, not just for organization’s sake but because I have a lot going on this spring and all the plans on the calendar reeled off in quick succession make it scary to think how fast the time will fly by. This weekend was the last for awhile with no major events. I had the happiest day on Saturday even though I wasn’t doing much of anything – running, baking and blogging, a burger and fries and ice cream with my boyfriend. I really need that kind of day once in awhile. I’m looking forward to everything that’s coming, but there is a certain amount of stress that accompanies it all, especially for a natural planner like me.

WIAW #49: Saturday Sweets

In today’s WIAW, you’ll see a lot of eats I posted on Instagram over the weekend (although this isn’t a complete Behind the Instagram like last week). I just ended up sharing most of my meals from Saturday in photo form, and it was a recipe shoot day to boot, which meant lots of snacking on sweets directly from my oven. Starting with breakfast. In addition to my lemon water, Larabar, and cup of tea before my run, I had a Buckwheat & Quinoa Banana Muffin – recipe coming this Friday!

Weekly Workouts and Updates: Spring Has Sprung, 3/7-3/13

I don’t want to jinx it, but after this week, it seems like spring has sprung in New York City and I couldn’t be happier with the sunshine. It wasn’t a particularly cold winter. In fact, most of it was rather mild, save the arctic freeze over Valentine’s Day weekend. But there’s something about the arrival of spring, a season when the world is in bloom and everything is reborn, that’s particularly conducive to lazy weekend mornings, long runs in the not-yet-hot sun, fresh foods, and a general feeling that now is the time when new hopes and dreams can come alive.
