Reflections on 2015

On the last day of the year, I’m thinking about and sharing my reflections on 2015. It’s been a year of major milestones, as documented in my post on my one year blog anniversary. Yet what’s mattered even more than the big events is how each moment helped to change my life as a whole. Being able to look back on how it happened through this blog is pretty special.

WIAW #38

This WIAW is all about my eats on the (third) to last day of 2015, one I spent in Connecticut relaxing with some old friends from growing up and preparing to greet the arrival of the new year. The day kicked off with a big slice of my Pumpkin Apple Spice Loaf, made with a little less flour and a little extra coconut oil for an especially moist and doughy treat. I had it with a yogurt with peanut butter and blueberries and a mug of decaf coffee, as well as half an apple.

Holiday Weekly Workouts and Updates 12/22-12/28

It’s the last Monday of 2015, but with the extraordinarily warm week of Christmas we just experienced in New England, my holiday weekly workouts and updates are looking a little more like April than December. I ran outside 4 days and wore shorts and a tee or tank every time, walked my dog in shorts and flip-flops on Christmas Eve, and didn’t even bring a coat when my family went to see Star Wars and go for sushi on Christmas Day. I baked while we caught the end of the A Christmas Story marathon on TV, and we made frozen hot chocolate to drink with the treats. Whatever the reason, I’m not complaining. I love a snowy white holiday season, but it’s been nice to spend so much time outdoors!

My 2015 Running Year in Review

As Christmas is upon us and it’s just a week until the clock strikes on 2016, I’m sharing my 2015 running year in review. I debated whether to do this, since earlier this month was my first blog-iversary and I recapped a few highlights then. But since Renaissance Runner Girl started off as a running and gluten free recipe blog, and I still focus a lot on running (with more lifestyle posts now than then) I figured it was only fair to give running a dedicated post!

These Cinnamon Raisin Quinoa Muffins are grain free, dairy free, and the perfect winter sweet treat.

Cinnamon Raisin Quinoa Muffins

When I first made the transition to eating gluten free, I learned to rely on gluten free oats as a base for many baked goods. Now that I’m limiting grains, I’ve found quinoa flakes to be an excellent substitute. With that in mind, I whipped up this batch of Cinnamon Raisin Quinoa Muffins over the weekend, perfect for breakfast or a snack just like my oat based banana, peanut butter, or pumpkin muffins. They take just ten minutes to whip up and fifteen to bake, and they’re grain free and easily made dairy free and even vegan!

Weekly Workouts and Updates 12/14-12/21

Instead of the usual blahs that accompany a Monday morning, it seems like everyone is truly in the Christmas spirit, eager to get through the next few days before heading home for the holidays! At least, that’s what it seemed like on my walk to work this morning. Even though my family doesn’t celebrate Christmas (it’s Hanukkah for the family and Chrismukkah with friends) I am definitely looking forward to enjoying their company come late Thursday afternoon. WIAW #36

Another Wednesday, another WIAW. Except that usually I’d expect to be sharing mugs of hot cocoa to stave off the winter chill, when in reality we’ve been having a bit of an Indian Summer spell this December in New York City and what I’d really like most of the time is a bowl of fresh berries! Which luckily I got this week, at breakfast for a work seminar. I had a slice of smoked salmon quiche beforehand since it’s usually just bagels, but the fruit was a nice surprise.

Deliciously dense, moist banana bread blondies, grain free, dairy free, and a perfect winter treat.

Banana Bread Blondies

Tis’ the season for bananas. At least it is in my book, because with summer long past and fresh berries and melon a distant, mouthwatering memory, apples and bananas become my go-to fruits. I eat a lot of apples whole or sliced with some peanut butter. Bananas, on the other hand, I’m not a huge fan of plain, and I tend to eat them alone only after a race when they’re the only gluten and nut-free snack available! So how do I incorporate them? Well, I take those bananas and put them into bread or brownies.  And sometimes, while I’m whipping up such treats, I accidentally create a new one, like these grain free Banana Bread Blondies.
